Lipid oxidation and its control through antioxidant strategies have been studied for decades. Yet, these topics remain high relevant in today’s world, striving for greater sustainability, higher nutritional quality, cleaner labels, and minimal processing. The symposium will highlight cutting-edge research on lipid oxidation mechanisms, analytical methods, antioxidant strategies, and nutritional implications.
